Overnight Oats

Recently, I’ve been loving to experiment with overnight oats. It’s a quick and simple way to make sure I get a good breakfast, even on days when I find myself rushing out the door! I find that making overnight oats before bed helps me relax (mainly because I enjoy making new recipes) and feel more prepared for the next day. Another added bonus, is that there are so many variations of this recipe that I never seem to tire of it!
Creamy almond butter swirls are a decadent way to add in some protein, and topping it with raspberries makes overnight oats reminiscent of PB&J toasts of the past. I tend to add in a bit of Flaxseed meal for added fiber benefits, but you can also add in or sub chia seeds if you’re looking to add in more iron to your diet!
My other favorite flavor combo at the moment is peanut butter overnight oats, topped with banana slices and sprinkled with cinnamon! How good does that sound?!

OVERNIGHT OATS RECIPE:
1/2 cup Trader Joe’s Rolled Oats
1/2 cup Unsweetened Vanilla Almond Milk
1 tsp Flaxseed Meal
1 tbs Almond Butter or Peanut Butter
1 tsp Natural Sweetener if desired (ie maple syrup or honey)
Mix dry ingredients together with Natural Sweetener
Stir in half cup of Almond Milk
Drizzle in nut butter, and gently fold in so it’s incorporated throughout mixture
Cover and set in fridge overnight
Wake up, top with fruit & toppings of your choice— Enjoy!
